Id like to know a bit more about themed pets and unsure where to go. Biggest questions I have is why some have yellow stars and why some have blue stars. Second question is why some themed pets I have look different then in the Themed Pet Codex. For example my Summer Salad Faelora, it still counts but it looks so simple and basic where in the Codex it looks like it has a lot more traits to it. How can I find a more visually cool one? If anyone has an explanation or knows a forum that explains this Id appreciate a answer or link! Thank you!

blue star themed pets are Purebred Offspring, it means they are the children of themes.
orange star themed pets are often referred to as "tagged" themes, it means they are the first generation of that theme.
the reason some pets may look different in the themed codex is because of the different traits, most themes will use any traits from a table while some themes will only used restricted traits (known as "Restricted Themes").
a lot of the time to get more traits you will breed themed purebreds to get the desired appearance, which is what a lot of people do for projects. ^^

in the codex the images used use multiple traits to show more of the colours.
You can choose to see either a 'default' traits or 'matching' traits in the Codex; Default images are 3v with a random selection of traits that Krinadon set for whichever theme to show (except majestic themes which have their theme's trait set, eg Celestial Deity Lighira is shown with the Ancient Deity trait set) and the Matching traits images have the same 6vis traits shown on all themes for easier colour comparison.
Meanwhile, if you find a themed pet in the wild, it'll most likely be a Rare rarity (blue stars in battle*, 2tp (1 vis or 2 carry)), with lower chances of Epic (purple stars in battle, 4tp (2vis, or 1v/2c, or 4c)), and the even rarer chances of legendary (yellow stars in battle*, 6tp) and mythical (red stars in battle, 8tp)
Themed Pets made via sclupting are likely to be 1 or 2 vis, and sometimes 3vis
The traits that wild or sculpted themes have will be completely random (discounting that wilds cannot have restricted traits (aside from lost grove themes being able to have lost grove restricted wild traits) and majestics only being albe to have traits from their own theme's set)
(* as opposed to blue or yellow stars in a pet's profile where, as Yurei mentioned, it means a Purebreed themed pet or a gen1 themed pet respectively)
In order to get higher visible count (save those incredibly rare 3v Legendary or 4v mythical wild themes that can be Mutated to being 4v or 5v respectively), it's down to breeding
