Well...I don't understand some stuff so here goes

What are essencess? And how do you get them?

What do you use scales for and how am I getting them?

Is there a way to speed up aging?

What do I do with egglings?

And what does nurturing do?

Essences can be used to generate new Sylesties(pets), which is under the account tab, the generator button. :3 You can get essences in a number of ways, from battling wild Sylesties, nurturing Sylesties, running missions, playing Jinxie's Jamboree, buying them from other players, or paying diamonds for them from the diamond shop. Though, it's rare to get them.

You get scales from nurturing egglings and hatchlings, and you can spend them on goodies in the scale shop, which is in the shops button.

The only way to speed up aging while the Sylesti is an eggling/hatchling is for it to get lots of nurture clicks. Every 5 clicks will shave off an hour. Once they become adolescent, the only way to speed them up to adulthood is to use magical pies. Each one will take six days off the waiting time(but they have a three-day cooldown), and that can only be purchased for diamonds from the diamond shop.

You can keep an eggling, which will hatch into a new Sylesti for you, or you can sell it/release it if you don't want it.

And nurturing will help the eggling/hatchling grow up faster, give them little stat boosts, and give you a scale for your trouble if you nurtured them correctly. :3
