if not, list something you think is worth diamonds (it doesn't really matter if I have that item you list or not)

You don't have any old themmed or pure breed that are almost imposible to get anymore so i don't think you can sale them for diamonds. What you can do however is sale them for gold and then when you have enough gold trade it for diamond via curencie exchange. (1 diamond is generaly between 1500 and 2500 g.)

My Goal is 50 Diamonds, so I can get a pet back that was released because I supposedly didn't have enough stable space when I clearly had a spot open, I only have 5,033 coins right now...

If you did have the space and the pet was released anyway, is it possible the Hatchery Setting "Auto Release Un-Named Adults?" is set to "Yes"?
You can probably make a post in the bug forum anyhow, but I'd check that anyway if I were you.

In that case, I'd suggest you make a post in the bug forum, with link to the pet, and including that you have the stable space and that the auto-release setting is off.
