I got a Ny'vene essence from nurturing (YAY) and used it to make a very striking white lady.
...But then she came out gross and desaturated ;; So I used my only pet dye on her...and her colour didn't change at ALL (I think it got darker, even!).
Are these things EVER accurate? The same thing happened with my OC-inspired bulbori...he came out weirdly grey ;A;

They're rarely 100% accurate. When you use them there's a change of the color swinging in all directions, so sometimes it can be darker, lighter, more or less saturated, or any mix of those. Generally I try to design my pets colors to where they will look fine even if there's a little swing, and I've actually had pets that I loved even more with the color swing that what I had picked out. But if you're looking for an exact hex color and no variation will do, it might take awhile (or you'll have to use a mystical dye)

@Clockwork, Like Ash said, they are rarely accurate (That's what makes the regular and lesser) but they can still give you, maybe not exactly... But really, really close to what you want sometimes.
Regular Generated:
What I wanted: What I got:
What I wanted: What I got:
What I wanted: What I got:
Pet Dye:
Before: What I wanted: What I got:
Before: What I wanted: What I got:
(Still not done dying that last one.. oi.)
