You can trap Ryori the same way you trap any other pets; it all depends on the rarity displayed for the pet encountered. Common(white stars) and Uncommon (Green Stars), you can use a lesser snare. For Rare (Blue Stars) and less you can use a standard snare. For Epic (Purple Stars) and less you can use a strong snare.

Fabled just means that you can only get them a certain way or during a certain tiem. Since Ryori are made specifically for the fall festival and only available int he wild during the festival, that makes them fabled.

I've been trying to trap critters, but they keep getting away! Anybody got any tips?

Weaken the pet as much as you can without killing it. When the encountered pet has low health, use a move like block or mend on your turns, so you don't kill it on accident. Also, stock up on traps, they have a varying accuracy/fail rate. Sometime's you'll catch a pet on the first try, other times it might take 3 traps or even more.
Also: There's not really a way to prevent a pet from fleeing; its random when it runs away or when it sticks around. Just keep trying.
