Uh, it's pretty much the same. You max stat by doing a series of breeds and increasing the stats with each egg. You can make it easier by using items and picking starting pets with already high stats. The only difference I can think of is fabled pets might be me difficult to obtain originally and get the number you need to start a breeding program.

One other difference between fabled and non-fabled which you may / may not want to take into account is the cool-down period between breedings. The fabled species have a 7 day cool down period (as opposed to 3 days for non-fabled). Particularly if you're looking to complete a design before starting on the stats, 7 days versus 3 days could conceivably result in a project that takes longer...
That said, the 7 day cool down when you need a two breeding pairs for the next generation means Magic Pies are a better match.
As a general observation / impression, if you wanted to use Exclusive pets for the project, I think there's a higher chance that Fabled pets would generally be given more boosts, etc or people may use Prismatic Philters on them when they first hatch and it may be you can find breeding partners owned by others that have higher base stats to start.

Fabled pets typically start with much higher base stats, which means a lot less prismatic philters to get them to max stat. Others have already touched on the longer cool down.
All of my non fabled max stats have cost me more than my fabled to get to max stat, but people are typically more willing to pay more for fabled.
If you are planning to do max stats, I highly recommend you pick something YOU like first and foremost. Then look at what others might like. Unless you love marketing, you are unlikely to make back what you spend on max stats.
