Possible Combinations
Here's a handy-dandy chart on what combination of cards are possible!
There are a total of 45 combinations. You cannot have two of the same number (e.g. two 3s for a total of 6), so these cells are blocked out.
Also, if a card is in the discard pile, it will not be one of the AI's cards.
The highest you can have is a 9 and a 10 for a total of 19, and the lowest you can have is a 1 and 2 for a total of 3. These cells are highlighted in green, since you are guaranteed to win if you say your cards are higher than the AI's and lower than the AI's (respectively).
Since the highest possible combination is 19 and the lowest is 3, the average score is 11.
The math for that
19 + 3 = 22
22 / 2 = 11

How to Win
So now you know what combination of cards are possible, but how do you win? You pick smart!
Like I said above, if you have a 19 or 3, you already know if you'll win. If it's 9 and 10, the sum of your cards will be higher than the AI's. If it's 1 and 2, the sum of your cards will be lower than the AI's.
Since one card is revealed at a time, you might automatically know if you will win or not based on the AI's first card. For example, if you have 5 and 8 (for a sum of 13), you should probably guess that the sum of your cards will be higher than the AI's. If the second round shows that the AI has 2, then no matter what your cards will have a higher sum than the AI's. Why? Since the cards range from 1 to 10, there is no possible combination that can give a higher score than 12, even if their second card is 10.
There are other times when this happens. This can also happen if the sum of your cards is 12 or more and if the AI's first card is 1, your cards are 13 or more and the AI's first card is 1 or 2, and so on.
Similarly, if you guess that your sum is lower than the AI's and if the sum of your cards is lower than their first card, then your cards' sum will be lower than theirs. For example, if you have 3 and 4 (sum of 7) and their first card is 8, your sum will be lower than theirs no matter what because 7 is less than 8.
Since there are a total of 45 combinations, the odds of winning are based on luck and math, but you can have a good guess using simple math. You can use the table to see what the odds are of your cards having a higher, lower, or equal sum to the AI's. Just count how many possible combinations there are that can give you that number, or how many combinations can give you a higher or lower sum.
To make it even easier, a card in the discard pile will not be one of the AI's cards, which narrows down which cards the AI could have.

Tips and Tricks
Since the average sum is 11, I would recommend saying you have a tie for the first round if the sum of your cards is 10, 11, or 12. This is because there is a roughly equal chance that your cards' sum will be equal to the AI's, and there is no penalty for saying that your cards' sum is higher, lower, or equal to the AI's in the first round, but you will win 80 points if you're right.
If you have a sum of less than 7, I would recommend saying that your cards are lower than the AI's because if you have a sum of 7, there is a low chance (6 in 42) that your sum will be greater than theirs.
If you have a sum of 15 or more, I would recommend saying that your cards will be greater than the AI's because there is a low chance (6 in 42) that their sum will be greater than yours.
If you have a sum of 8, 9, 13, or 14, I'd just use your own judgement.
If you switch you will have a reduced bet, but you can't lose points from the first round. Remember, even a reduced bet is better than losing because if you switch, you will get the 10 points you used to play the round back for a net loss of 0 points.
