I recently got 7 seeds, but only a few hours left of the fest... Will they still be there after the fest ends?

The festival zone & forum games close today.
After that, theres a week of fest left so players can finish up their plants.
(Can be seen in the overview.)

I haven't planted them yet, but will they still be in my supplies next year?

No, they will not be in your supplies next year. If you do not plant and harvest them by the end of the extra week, you will lose them.
There may be a special cut off for Krin to harvest certain unfinished plants (depends on what he decides after the fest completely closes), but that isn't something to be counted on. Basically, if you want a plant pet, you need to get the seed in a pot and work on getting it to harvest as soon as possible.
No matter what, any unplanted seeds and other supplies will vanish when fest completely closes.
