'Tanks the price on max stats' - means if someone can purchase 2 fertile, non-related max stat pets, even if they pay 750k for the pair, if they didn't put any effort toward the creation of those max stat pets, they have no reason to maintain the usual market price of max stat pets.
So... let's say you sell your nixis for 275k each (midway between the suggested retail prices). Person A purchases a male and a female from two different lines. Costs them 550k. They then turn around and start selling babies from that pair (probably also fertile because they likely don't know/care), and think 'I bought mine for 275k, so I'll sell these babies for 200k'.
Suddenly, not only is your design being sold without your consent, but your sales are being undercut by 75k per pet.
Someone buys one pet from that person and one from you (so they're unrelated). They paid 475k for their pair. They start selling their babies for 150k each. Now you've been undercut by 125k per pet.
At this point, there are two people selling fertile max stat nixis for less than you (and the general max stat market). No one is going to buy from you unless you drop prices, and no one is going to buy infertile max stat nixis at all because multiple people are selling fertile 6v max stat nixis.
At this point, it has tanked the max stat nixi market and the fertile max stat nixis will just get cheaper and cheaper, making it pointless to make max stat nixi projects anymore because anyone doing so would never get anywhere close to seeing a profit (mind you, max stat breeders rarely ever see a profit anyway on their projects, but this would make it worse).
This is why people infertilize their projects: to protect their designs, and to protect the worth of the pets they worked long and hard to create. This goes at least 10x for max stat projects because it's not just your project that has its price decimated, but the max stat projects of the entire species.

It costs an awful lot to get a final max stat pair. Most of the time, even selling at 700k+ per pet, you won't turn a profit on a max stat project. I have completed two max stat projects and am coming to the end of a very large third, and I definitely have not made back anywhere near what I spent on the first one XD. Pretty much any stat breeder will tell you the same, sadly.

All of my max stat projects are 6v lol. One is a themed nephini project, even. It's the cost of needing at least four prismatic philters per generation, plus up to two gender swapping philters per generation, plus magical pies if you want to shorten the month-long wait between generations, plus the cost of the originating pets, plus the time it takes to make the project at all (usually upward of a year just for the statting, never mind the breeding to 6v in the first place). Add in any pet dyes you need to get the right colours (and with you having white in your project, you'll need greater dyes), and it can be several million gold-worth to make a single 6v max stat pair.

Yep, as Mikazukichan said, max stat breeding is not a big money maker and a big money sink. If you are planning on doing a max stat project I would highly recommend:
1) Make sure it is something you love. That way you won't feel like you wasted your money and time if you never sell any. Of my three current completed max stat projects I have sold one vul, that is it.
2) Sit down and write/type out exactly how many generations it will take to max stat your project. Typically non-fabled will take more and therefore cost more than fabled, but people usually expect/want non-fabled for less. My ligh project will be 6 generations = 16 prisms and 6 mana potions (I like having two sets of max stat, so I can dye one set a different color scheme). My Lunamara project will be 10 generations = 40 prismas. I really had to think hard on whether I really wanted those lunes, but I love the design. You will also need to take into account gender swap philters. I assume one per gen.
3) Make sure you stockpile during sales!
Only you can decide if it is worth max statting. I enjoy it, which is why I am planning on doing one of each species, but it is also why I am constantly broke. Lol
