Could I change agility to hunting?

What do you mean? You have to have a minimum of three skills (to avoid someone being level 7 in something) but, yes, you can be level 2 in hunting?? I'm not sure if i grasp what you mean.

If we say you have 7 points. There are 12 skills and you have to put it into a minimum of 3 skills.
So, you could be level one in seven skills,
or level 4 Fighting, level 1 hunting and level 1 swimming.

You could also do a combination like:
-1 tracking, 2 defence, 3 fighting, 1 strength
-3 caring, 2 defence, 2 hunting
