Pork Medallion and Asparagus Compote Ferrikki


Twice Baked Gouda Potatoe Lighira



First, reduce the asparagus into a compote with garlic powder, salt, onion powder, black pepper, and clove. (for directions on how to make a compote please see below)

Cut the raw tenderloin into 1 & 1/2 in thick medallions, then sear the medallions on both sides in butter and seasoning, in a cast iron pan; then add in half of the asparagus compote, cooking over a medium heat and continuously basting the medallions until their internal temperature reaches 145F

Wrap the potatoes in foils and place them directly on the rack and bake on 350F until they are soft enough to insert a fork with ease. Take the baked potatoes out of the oven and then the foil and let them cool so you can slice them in half without burning yourself.
Scoop out the insides of the baked potato so only a thick potato skin boat is left. then in a bowl; combine the potato insides with heavy cream, salt, pepper, garlic, and part of your gouda and blend until it has a smooth and creamy consistency. Fill hollowed potato halves with your creamy cheesy potato mixture and place them on a greased cooking sheet.
Brush the potato halves with melted butter and top with more shredded gouda and return the potatoes to the oven and broil them on 200F until the cheese is crisp on top.


Directions for homemade asparagus compote:
Rinse asparagus and snap off tough ends if needed. Place in a large stockpot and cover with water.
Bring water to a boil over high heat. Cover and cook 10 to 15 minutes, until asparagus is tender when pierced with a fork. Drain well.
Place asparagus in the bowl of a food processor fitted with a metal blade. Add water, lemon juice and salt. Process, adding more water if necessary, until pure is thick and smooth. (You may need to process the asparagus in 2 batches)



Plating:
Cover bottom of dish with remaining compote. Place 2 medallions centered in dish. Place one potato half at 2 and the other at 10.
Garnish the plate with lemongrass

Congrats to the ones tagged. You have made delicious dishes and have made it onto the next round.

Now, we have a fantastic even number. So I will pair you up, you give your partner a basket and have them create a dish out of that.

The rules for what goes in the basket, I need four items, vegetable produce, a carbohydrate/starch, a meat produce, something that could be potentially considered for pairing with the other basket items.

Clarifications, please tag your partner and I. As well as you are not working on the same dish together, you are giving each other an individual basket to cook with. Other than that, the same rules as this parent post goes in terms of naming dish and having description/recipe etc.
