Appetizer----------------------------------------------Carimanola
Carimaola is a meat-pie in a torpedo-shaped yuca fritter, stuffed with cheese, seasoned ground meat or shredded chicken and fried.


Salad----------------------------------------------Ceviche
Ceviche is typically made from fresh raw fish cured in citrus juices, such as lemon or lime, and spiced with aj or chili peppers. Additional seasonings, such as chopped onions, salt, and cilantro, may also be added.


Entree----------------------------------------------Changua
Changua is a mixture of equal amounts of water and milk that is heated with a dash of salt. Once it comes to a boil, one egg per serving is cracked into the pot without breaking the yolk, and allowed to cook for about a minute whilst covered. The soup is served in a bowl, garnished with scallions, curly cilantro, and a piece of stale bread called "calado" which softens in the changua.


Dessert----------------------------------------------Milhoja
Milhoja is a dessert made with stacked layers of puff pastry filled with arequipe; a creamy mix of condensed milk, sugar, and vanilla; or white chocolate.
