[Chicken Risotto w/Caramelised Cherry Tomatos]



Featuring: the dish parents and their little adopted caramelised cherry tomatoe baby :p

[Ingridients]
- Chicken Breast
- Arborio Rice
- Parmesan Cheese
- Cherry Tomatoes
- Chicken Stock
- Crushed Garlic
- Brown Sugar
- Spinach Leaves & Basil
- Olive Oil & Salt & Butter & Balsamic Vinegar


Brush olive oil and crushed garlic (and other assorted seasonings like paprika if you so desire) onto chicken breasts and bake them in the oven for 30 minutes or until golden brown. Separately make a mixture of brown sugar, balsamic vinegar and Olive Oil and place all the tomatoes in until they're fully coated. Then place them onto a lined baking tray and roast them until they're caramelised. In a cooking pot add the Arborio Rice, stock, crushed garlic and salt and cook it for 5 minutes before baking it for 20-30 minutes.

To serve, start by putting the rice in each of the bowls, with the chicken and tomatoes on top. Finally, garnish with basil.

I choose this dish because it's a pretty simple (which is always the best kind of dish), and I love cherry tomatoes especially caramilised ones! They're amazing!

Beef bulgogi with Zucchini and Bok Choy stir fry served with rice




Pre- set up

- In a medium bowl, whisk together pear, soy sauce, brown sugar, sesame oil, garlic, ginger and gochujang. In a gallon size Ziploc bag, combine soy sauce mixture and steak; marinate for at least 2 hours to overnight, turning the bag occasionally.

- Rinse the jasmine rice in a fine mesh strainer under running water until the water from the rice runs clear.

Cooking:

- In a medium saucepan with a tight-fitting lid, combine jasmine rice, 2 cups water, and salt to taste. Bring to a boil, then reduce the heat to low and cover. Simmer for 15 minutes, then remove from heat and let stand, covered, for 5 minutes. Fluff with a fork and keep warm.

- Heat 1 tablespoon vegetable oil in a large cast iron skillet over medium-high heat. Working in batches, add steak to the skillet in a single layer and cook, flipping once, until charred and cooked through, about 2-3 minutes per side. Transfer to a plate and keep warm.

- In the same skillet over medium-high heat, add the remaining 1 tablespoon vegetable oil. Add bok choy and zucchini and cook, stirring occasionally, until crisp-tender, about 10-15 minutes. Season with salt and pepper to taste.


Plating:

You can serve the beef bulgogi and vegetables over the jasmine rice, or serve your beef bulgogi over the veggies centered around the rice; garnished with green onions and sesame seeds, if desired.

Okay, so my ingredients were red onion, masa harina, skirt steak, and basmati rice.

Steak Street Tacos and a side of Spanish Rice



First is marinating the steak. Mix 2 Tbs soy sauce and 2 Tbs lime juice, 1 Tbs canola oil, 1 Tbs minced garlic (3 garlic cloves), 2 teaspoons chili powder, 1 teaspoon ground cumin and 1 teaspoon dried oregeno. Cut up steak into half-inch pieces. Put skirt steak chunks into gallon size bag and pour mixed marinade over the steak. Marinate for 1-4 hours depending on how strong you want the flavors.

While the steak is marinading, its time to make the tortillas! Place 1 cup of masa harina in a bowl. Add warm water until the masa forms a smooth dough (it shouldn't crack excessively when you press your fingers in it). Then split the dough into 8-10 little balls (it kinda depends on how big you want your tortillas?) and flatten them a bit into little pancakes. Take two sheets of wax paper, and place one on your workspace. Put a dough pancake on top of the wax paper on your workspace, and put the other wax paper sheet on top. Take a large dinner plate and press down with your body weight to flatten the dough into a tortilla. Remove the tortilla and wax paper on top, and do this until all the dough pancakes are tortillas. Heat a skillet on medium heat, then put a tortilla in the skillet. Heat on one side for 20-30 seconds, then flip and heat again. Flip one more time back to the first side to finish off. Do this for all the tortillas, and now you have hommade tortillas!

Take another skillet and add 1 tbs of canola oil. Add steak chunks and marinade to the skillet. Cook for 6 mins or so until the steak is browned and the marinade is reduced. Scoop steak into tortillas and top with chopped red onion, lime juice, and cilantro.

Now for the rice! Rinse the basmati rice. Heat some olive oil in another skillet and cook chopped onion down until its translucent (6 min or so). Add the rice and cook for another 2 min until its fragrant. Stir in tomato paste and garlic, diced tomatos, jalapenos, salt, and oregeno. Pour in vegetable broth and bring to a boil. Reduce the heat, cover the pot, and simmer for 15 min until rice is tender. Remove rice from heat and leave it covered for another 10 minutes to steam. Fluff with a fork when its done and serve.



I picked this because making tortillas is usually my first move when I have masa harina ( I have some right now, haha). It's also a really good way to use up all the ingredients, and though it takes a while to cook, its a super delicious meal if you have a lot of time on hand!
