I remember reading it somewhere but what are the differences between these stats in wild creatures?

Colors
Grey = Common
Green = Uncommon
Blue = Rare
Purple = Epic
Orange = Legendary
Red = Mythical

Stars
1 = Weak
2 = Standard
3 = Superior
4 = Elite
5 = Boss

Colors determine how many genes a Sylesti has.

Stars determine how difficulty the enemy is.

Does the number of stars affect the pet's stats when captured?

No, base stats are determined by species.

So the rarity and or/ amount of stars in no way effects the base stats of a Sylesti?

Was also wondering the same thing. Such as would the base stats be affected by the rarity of the pet (like a blue star species having higher base than a green or grey of the same species)?

At this time, no. Base stats are entirely based on species.

If you scan a pet during a battle, you will see two stats... its base stats and then its battle stats. Depending on the level/difficulty of what you're fighting, the battle stats can be significantly higher than the base stats. If you were to capture it, its stats would be the base stats.

Do the off spring of said critters ever get slightly better stats than the parents, or will they wind up with the same stats?
