does the tutorial even cover missions? I know it covers quests but I don't recall it covering missions?

But if you do mean missions, then you'll want this guide
quick summary:
Have pets set up to specialize in one stat (profs+gear), eg, air pet with all profs in str + myrmidon/assassin gear as a Strength mission pet
Go to Barracks in Esior's Haven or Sanctuary of Saerielle
Check what missions are there this hour (each level/rarity in each place has one mission for each of HP, Str, Int, Dex, and Agi, and it randomly picks what is in each slot every hour. However, if you already have a pet on, say, Esior's Haven Lv25/Very Hard Strength mission, if it randomizes to have that mission again, you cannot take it a second time, you must end/complete it before taking it again)
At the Barracks, you can see the recommended minimum level for the mission (with profs/equips in mind)
Click 'view info' to bring up a popup where you can see what stat the mission wants in the top left section (you can learn to recognize them- the mission names are directly linked to the level/rarity/location; lv50 mission 'restoring order' for example is the Dex mission). In this popup, select the pet to send on the mission, and set them off (if you make a mistake, you can go to your mission log and cancel, refresh the barracks, and send the correct pet)
I'm not sure what number of mission slots you start with, 2 maybe? You can unlock more at the town plaza until you have the max six slots
