Well i am not here for a long time,so..
the first pets i cought or bred (who needed 28 days to become adult) just reached this and are gone from my hatchery..
Now i am wondering about the hatchery settings..
It says "Auto-release adults" only ...but the cross isnt there..
No marking sets and the pets are in my stable now..If there would be a mark it would be gone right?
Is there a way to change it?
Can adult pets still be in the hatchery?

Adolesent pets are automatically moved to the stables when they become adults, there is no way to change that.
The box in the hatchery settings is for Un-named adults to be auto released or not.

Yes. If your stable is full and there is no space available, the pets who just became adults in your hatchery will be auto released into the wild, and there would be no way to get them back except for admin intervention.
