What is the schedule for holiday events? I need to know because I'm not sure what event do you participate to get a specific item. A Pooka's Fox Head for example.

Times can slightly from year to year but most of the time you'll find what you're looking for in this forum. There's usually a festival (fest) for each of the seasons and sometimes mini-fests between those. They don't have set dates and we won't usually know when they're being held until Krin announces them.
We just finished up Fortune Week, a mini-fest, yesterday. The Pooka's Fox Head was available during this year's Fortune Week as a random drop after defeating a boss. It may or may not be available next year. We won't know until next year's Fortune Week is announced. Til then you can buy it from other players on the broker or Item Auctions Forum.
The Spring Festival is being held in May but there are a few long-running contests already up that you can participate in.

A Pooka's Fox Head is only available in the Fortune Festival, which already passed, and in order to get it you must go into Astryl's Vale zones. Here is the list in order though, starting from January
Winter Festival
Week of Love
Fortune Festival
Easter Weekend (Sometimes)
Spring Festival
Patriotic Event?
Summer Festival
Fall Festival
Winter Festival
I think this is the complete list. The Spring, Summer, Fall, and Winter Festivals have their own unique zones, which change every year. The other ones boss spawns appear in Astryl's Tranquility or the Orchard

Where's Astryl's Vale at, and how can you access it?

You unlock it while completing the story. Once you've unlocked it you'll find it in Astryl's Vale on the upper left side.
