do they drop from creatures after fighting or can i skip all the fights and just come accross them?

typically regions 1 and 2 consider 'progression' by battles fought, when in relation to quests. I have no idea a how it relates egg hunt info, but I found all mine post-battle rather than, say, after interacting with boxes
However, I will note that it doesn't matter what level your team is for the egg hunt, so you can basically just steamroll encounters with a high-level team for it

or look for the spoiler thread in the player guides if you're lazy like I can get (its been a while since I was in htat region so....)
