Now, there are a ton of pet species in this game.
What I've been wondering is if at base, there is any stat difference between species other than fabled vs non-fabled? (I think Fabled pets have higher stats I might be wrong about that.)
For example, if I took two random species of pet (assuming they are both fabled or both non-fabled), one would naturally have higher attacking stats, while the other would naturally have better defenses.

Regular species vs Fabled
Fabled have about double the base stats that a regular species obtained the same way has
(obviously the exact amounts of any given stat varies by species)
For example, an enhanced Aurleon essence will make an aur with these stats:
Health: 200 Mana: 100
Strength: 20 Intelligence: 24
Dexterity: 22 Agility: 24
While an enhanced aeridini essence will make an aeri with these stats:
Health: 260 Mana: 120
Strength: 28 Intelligence: 48
Dexterity: 32 Agility: 36
Fabled also have a 7 day breeding cooldown as opposed to the 3 day cooldown of regular species.
This is also why Puffadore are 'pseudo-fabled'- they're counted as fabled because they cannot be found in the wild, but they have both the lower base stats and the shorter breeding cooldown that mark them as a regular species

What Scathreoite say apply mainly for exclusive and generated pets, tammed and offspring work differently stat whise (the breeding cooldown isn't affected by those change, only the stats).
For tammed pets, the stats are usualy in the 15 to 25 range for strengh, agility, intelligence and dexterity no matter the speacie, however buying puffadore or ny'vern eggs allow you to boost their stats with philters and nurrituring witch can affect the stats. In the lost grove, the wild stats are affected by the amount of traits and whether or not the pet if themmed.
For offspring, the parents stats is all that matter, this is why all speacies can be max stats with enough time and philters. A fabled offspring will have higher chance to have high stats if it's parents were exclusive or generated since the enherite those statistic from them (but an offspring from wild caugh fabled, as an egg, will not get higher stats then a non-fabled).

What Scathreorite and Cian do apply but some species may have their own specialties naturally. I'm not too sure if this is correct but I'm pretty sure it is. Say you have 2 fabled species a Ryori and a Griffi that you made during a festival. You didn't add anything to boost its stats of any sort, the Ryori would have higher agility because that's it's natural specialty. Some species do have stats they 're naturally higher in I believe, not sure how correct that is though.
